When the quality of raw materials meets creativity in the kitchen, collaborations are born capable of telling a story of territory, passion, and the pursuit of authentic taste.
It is precisely from these shared values that the collaboration between La Spora Tartufi and the Molino San Giuseppe restaurant in Soncino (BS) comes to life, where chef Claudio has created a complete gastronomic journey, from appetizer to dessert, entirely dedicated to our Fine Black Truffle.
Four dishes, four different interpretations, united by a single goal: to maximize the aromatic characteristics and versatility of an extraordinary product.
Starter
Panbrioche with Fine Black Truffle and mountain fondue
An elegant and enveloping start: The soft and buttery panbrioche cube pairs with the richness of mountain fondue, creating a creamy and intense base. The Fine Black Truffle completes the dish with its aromatic notes, adding depth and refinement to every bite. An appetizer that plays on the balance between textures and aromas.
First Course
Fresh egg tagliolini with truffle butter, Grana Padano sauce, and Fine Black Truffle
A great classic reinterpreted with care and technique. The fresh egg pasta tagliolini are wrapped in a delicate truffle butter and enriched with a creamy Grana Padano sauce. The result is a harmonious dish, in which the naturally sweet taste of Fine Black Truffle emerges elegantly, without ever overpowering the other ingredients.
Second Course
Marrow with truffle cream, Fassona knife beat and Fine Black Truffle
A bold and contemporary proposal. The rich, velvety marrow combines with an intense, fragrant truffle cream. The Fassona knife beat adds freshness and structure to the dish, while the Fine Black Truffle, sliced on the spot, ties all the elements together with its unmistakable aromaticity. A second dish that expresses character and technique, designed for those who love bold yet balanced flavors.
DESSERT
Cheesecake mousse in shortcrust pastry crumble with Fine Black Truffle
Who says truffles can't also be a protagonist in sweets? This light and creamy cheesecake mousse is accompanied by a crunchy shortcrust pastry crumble. Finely sliced Fine Black Truffle surprises the palate by creating a refined contrast between sweetness and aromatic notes. A distinctive feature of the Black Fine is its slightly sweet taste, which allows you to create pairings even with a dessert. An original ending, capable of surprising and leaving an indelible memory.
A journey through taste by La Spora
This collaboration with Molino San Giuseppe represents for us a real dialogue between excellent raw materials and culinary creativity. Each dish tells the story of Fine Black Truffle in a different way, demonstrating how versatile it is and how it can adapt to classic and innovative preparations, from appetizers to desserts.
