First choice: the excellence of truffle

The first choice represents the top of the range in the world of fresh truffles. These are roundish specimens, with very few aesthetic defects and with an almost intact surface (peridium), free from obvious scratches. Their size is generous, starting from 15/20 grams and up.

These truffles are mainly intended for the world of Haute Cuisine, where the truffle becomes the protagonist: served at the table under the glass dome of a truffle serving kit and sliced directly onto the plate, it releases all its aroma in an incomparable sensory experience.

Second choice: excellent quality, less perfect aesthetics

The second choice includes truffles that, despite having the same internal quality as the first choice, have some external imperfections. They may have been scratched during extraction – often by the truffle dog – or have a less regular shape.

Despite the less perfect appearance, they have nothing to envy to the first choice in terms of aroma and taste. It can still be sliced and offer aesthetically pleasing slices, but it does not have the ideal appearance to be presented directly at the table in front of the customer.

Third choice: small but precious allies in the kitchen

The third choice truffles are smaller and more externally marked, often deriving from the cleaning of the second choice or are naturally small specimens.

This selection finds multiple uses: it is used in cooking for the preparation of truffle sauces, gravies, and creams, or to train truffle dogs, thanks to its still intense and recognizable aroma. These are ideal truffles for those looking for authentic flavor without paying too much attention to aesthetics.

Understanding the distinction between the three choices allows for making the most of each type of truffle, depending on the use you want to make of it. From the table of a Michelin-starred restaurant to home cooking, each category has its reason and its value.

Naturally, market prices vary significantly based on the selection: first-choice truffles have a higher price, while other categories allow you to enjoy the taste of truffles in a more accessible way.
