Use in cooking:
The use of summer truffle carpaccio is varied, from appetizers to first courses, or on a second course of meat or fish. Excellent also to use on eggs or on a fresh mozzarella. It is advisable not to heat it too much as the flavor of the truffle would tend to disperse.
Ingredients: summer truffle (Tuber Aestivum Vitt.) from Italy (Abruzzo and Molise) 3rd choice 80%, olive oil, salt, truffle flavouring.
