The best way is to wrap it in absorbent kitchen paper and close it well inside a container. Then, place the container in the refrigerator. The wrapping must be changed regularly every day to avoid the onset of mold that can rot the truffle. The truffle thus maintains its freshness for about a week.
How to clean the fresh black summer truffle or scorzone
Immerse it in cold water for 5/10 minutes. Clean it with a brush or a toothbrush with bristles that are not too hard under cold running water and dry it with a dry cloth.
