How to prepare goose plin with white truffle
It begins kneading the flour and eggs by hand so as to have a mixture as uniform as possible. Then wrap everything in cling film and put it in the fridge to rest for an hour.
In the meantime, you can prepare the filling by browning the thyme, garlic, extra virgin olive oil, vegetables and beef cubes in a pan. Separately, dice the goose pulp and sauté it, then season it with pepper, salt and oil.
